    Abstract:

    Access to healthy and sustainable food is currently a major social issue. However, food access remains a significantly unaddressed topic in urban planning policies. In France, cities tackle this issue by encouraging short food supply chains and the procurement of organic and local food in public catering programs. Unlike other countries, the effects of certain environmental dimensions (food, built, social) on food behaviors and on the prevalence of obesity remain understudied. This PhD thesis contributes to a better understanding of the role of foodscapes in food access inequalities. Using a case study of the Montpellier city-region, the objective is to understand how foodscapes can cause or reveal inequalities. From the lens of social geography, the notion of foodscape seeks to compare and contrast the materiality of space with the “lived” space, as it is perceived and experienced by individuals. The research method combines quantitative methods using statistical databases and a survey of 699 households, and qualitative methods based on 27 semi-structured interviews. The first part of this thesis reviews the international literature on the term foodscape and analyses a set of publications by French geographers on landscape, food, retail and health. It leads to the identification of four dimensions in the notion: the physical, perceived, experienced and regulated foodscape. The second part explores the diversity of "physical" foodscapes in the Montpellier city-region by using both place-based and people-based approaches. It leads to a typology of foodscapes and to an analysis of the landscapes which individuals are exposed to while commuting. The third part focuses on "lived" foodscapes. Results from the interviews allowed the researcher to identify eight household-based food provisioning logics, describing the way in which individuals navigate, experience and perceive the foodscape, as well as the meanings they give to their practices. A mixed-methods design allowed the researcher to link these logics to the identification of three profiles of food provisioning practices. To conclude, our research invites further theorical and methodological consideration on how to better design urban planning and local strategies in order to reduce food access inequalities.

    •  Prior to modifying the foodscape in a neighbourhood, municipalities must gain insight into what shopkeepers and users expect so as to prioritize its actions in a concerted way.

    Key points?

    • Food outlet mapping enables local authorities to identify populations in their territory that do not have access to a nearby food shop.
    • In Greater Montpellier, there are major differences in physical access to food shops depending on the distance from the city centre. Communities on the remote periphery are the furthest away from shops selling fruit and vegetables.
    • The level of access to these shops does not depend on the standard of living in the neighbourhood. Yet some low-income neighbourhoods are underserved.

    Key points?

    • More than 75% of households have physical access to a range of different food outlets in their activity spaces, including areas around the home, work and other places of activity, as well as on the commute between these locations. In contrast, only 65% of households have access to a market.
    • Proximity is not the sole factor influencing food outlet shopping patterns. Households do not frequent all available outlets in their vicinity, mainly because of the prices, products offered and opening hours.
    • Most food shopping is done in supermarkets, but this trend is far from being exclusive. Nearly 50% of households spend at least 30% of their food budget in other types of shops.
